No Bake Peanut Butter Granola Bites Recipe

My son is 8 months old and already eats like a teenager. We started solids about two months ago and I cannot believe how much of the stuff he can put away. I just know that when he actually is a teenager, I’m going to be going to the grocery store seven times a week to refill the fridge. What will help is having plenty of snacks on hand that he can eat between meals to keep his energy level up. These No Bake Peanut Butter Granola Bites fit the bill.

They are incredibly easy to make — you don’t even need to turn on the oven. All you do is mix all the ingredients together, roll into balls and refrigerate. It couldn’t be easier. They are packed with things that are good for you like oats, almonds, chia seeds and ground flax seeds. They’re held together with protein-packed peanut butter to keep even the busiest kids running all day long. The best part of these granola bites is the “bites” part. These are conveniently bite-sized which means a) your kid can grab one and run right back outside and b) no biting = no crumbs on the floor. Win-win.

No Bake Peanut Butter Granola Bites Recipe Instructions

Yield: 20-24 bites

Ingredients
Cooking Directions

  • 1 and 1/2 cups rolled oats (old-fashioned)
  • 1/3 cup sliced almonds, finely chopped
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 3/4 cup peanut butter
  • 2 tablespoons honey
  • 1/4 teaspoon ground cinnamon
  1. In a large bowl, combine oats, almonds, chia seeds and flax seeds.
  2. In a small bowl, combine peanut butter, honey and cinnamon. Heat this mixture in microwave for 20 seconds so you can stir it together. Pour this mixture into the bowl with the dry ingredients and stir until everything is well coated.
  3. Spray your hands with nonstick cooking spray and roll the mixture into bite-sized balls, or about 1 and 1/2 tablespoons. Pack it together as your roll into a ball. Place on baking sheet and repeat until all mixture is rolled into balls. Refrigerate for 1 hour before serving. Store in airtight container in the fridge.
  4. Note: In case of peanut allergies, almond butter may be used in place of peanut butter.
