Grilled Chicken Burrito Bowl Recipe

What do you get when you take the tortilla away from a burrito? This delicious burrito bowl! This recipe is so easy and adaptable to what you like.

Prepare the toppings, using a prep bowl set or a caddy with separate compartments to organize the vegetables and garnishes as you chop and dice. To assemble, use a divided bowl and layer brown rice, black beans and lettuce. Then add spoonfuls of your favorite toppings, like corn, avocado, shredded cheese, green onions, and cilantro. Next add sliced chicken on top of it all and drizzle pico de gallo or salsa over the top.

The outcome? A delicious deconstructed burrito bowl!

Ingredients:

  • Chicken breast, grilled and sliced
  • Brown rice, cooked
  • Black beans, drained and rinsed
  • Lettuce, chopped
  • Corn
  • Avocado, diced
  • Cheese, shredded
  • Green onions
  • Cilantro
  • Pico de gallo

Directions:

  1. Layer cooked rice, black beans and lettuce in a bowl. Add spoonfuls of any toppings desired.
  2. Top burrito bowl with chicken
  3. Drizzle chicken with pico de gallo
