This rice is made from cauliflower (and purple cauliflower, at that!), which is a great way to add more vegetables to your plate in lieu of grains (like traditional rice). This rice substitute also makes this side dish gluten-free and Paleo-approved, so it accommodates a variety of different dietary needs.
Not only that, it’s super quick and easy to make! The main tool needed is a food processor. You can still make this recipe if you don’t own a food processor (but the food processor does make it a much quicker process – no pun intended).
Grab a head of cauliflower, it doesn’t have to be purple. But if it is purple, mark our word – you will cause a commotion in the supermarket checkout line.
Chop cauliflower into florets.
Process the cauliflower florets using shredding blade on food processor until they turn into tiny pieces resembling grains of rice.

- 1 head cauliflower
- 1 tablespoon olive oil

directions:
- Cut cauliflower into large florets.
- Rice cauliflower using shredding blade on food processor. Or pulse cauliflower in food processor with chopping blade, or grate by hand on box grater.
