This cookie dough recipe is very versatile and as much, if not more fun than play dough. Because it handles so much like play dough, it is excellent for baking with children. Let your imagination run free and create any cookie shape you can think of. We just happened to like this rainbow idea to celebrate st. Patrick’s day and the approach of springtime. It is also easy to roll out for cutout cookies. When thoroughly cooled, the cookies are excellent for frosting and decorating.
Rainbow Sugar Cookies Recipe Instructions

- 1 1/2 cups butter (3 sticks), softened or melted (butter flavored vegetable shorening can be substituted)
- 2 cups granulated sugar
- 4 eggs
- 1 1/2 teaspoons vanilla, almond, peppermint or flavored extract of choice
- 5 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- Food coloring
- In the bowl of a mixer, cream together butter and sugar. Mix in eggs and extract until well-combined.
- In a separate bowl, whisk together remainder of cookie ingredients. Add dry ingredients to wet in ½ cup batches until combined.
- Divide dough into 6 equal parts (more or less). Color each part of dough a color of the rainbow (red, orange, red, green, blue, and purple)
- Form the dough parts into discs, and wrap in plastic wrap. Chill for at least 2 hours.
- Preheat oven to 400°.
- Removed the discs from the fridge. Beginning with red, make a small cylinder shape about 1 inch long and curve it into an arch on the cookie sheet. (I often use parchment paper on my rimmed cookie sheet to save clean up time.) Continue adding cylindrical pieces of colored dough until you have a complete rainbow arch.
- Bake for 6-8 minutes, watching closely. Cookies are done when bottoms are just barely golden brown. Let cool completely on wire racks.
- To serve, place a dozen or so miniature marshmallows on either end of the rainbow. Your kids will love them.
