So Thanksgiving is over and you have leftovers to last for days. There are only so many times you can reheat turkey and stuffing before the family balks. If you are looking for a new way to serve your Thanksgiving leftovers, you will love these tasty Stuffing Muffins. It’s like your favorite parts of Thanksgiving dinner have gotten together to form something new entirely. These take less than 30 minutes to make, start to finish.

The ingredients for this recipe will vary depending on the quantity of leftovers you have. You certainly don’t want to make more turkey and stuffing and mashed potatoes, so use what you have leftover. The recipe is very adaptable whether you are making one muffin or six.

These muffins are so simple to make as they just involve layering stuffing, mashed potatoes, cut up turkey and gravy in a muffin tin.

The individual portions are great for kids and for adults who are looking to exercise some portion control now that Thanksgiving is over. These are perfect to make ahead and freeze and then pop in the microwave for a few minutes for a quick lunch. When you freeze these, you get to enjoy the taste of Thanksgiving months later.

In addition to being super simple to make, these Stuffing Muffins are just delicious! There is something about the combo of these ingredients all in one bite that just works. Normally you wouldn’t eat your mashed potatoes, stuffing and turkey in one bite, but you’ll be a believer after tasting these! If you are looking to make these and you are out of turkey, substituting chicken works just as well. You might also want to try adding a spoonful of cranberry sauce to the top once these come out of the oven. Yum!

Yield: Varies, depending on how much leftovers you have. The directions below are how to make each muffin. Repeat as often as you need for additional muffins. Recipe

Ingredients
Cooking Directions

  • Stuffing
  • Mashed potatoes
  • Turkey breast, cubed
  • Turkey gravy
  • Cooking spray
  1. Preheat oven to 375 degrees.
  2. Spray a muffin tin with cooking spray.
  3. Fill a muffin cup halfway with stuffing.
  4. Add mashed potatoes until the cup is filled nearly to the top.
  5. Add 1/8 cup of cubed turkey to the top of the potatoes.
  6. Top with one tablespoon of gravy
  7. Bake at 375 degrees for 15 minutes.
