Christmas Cranberry Cake Recipe

Fresh, in-season fruits are scarce during the winter months, so we’re always searching for new ways to use the ever-abundant cranberries supermarkets are stocking right now. This dish is a great choice to bring to holiday gatherings, as it is so pretty with the bright red berries. The tartness of the cranberries is balanced out quite nicely with the sweetness of the cake, so it’s tasty too!

First, preheat oven to 350 degrees.
With a mixer, beat a few eggs with two cups of sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. This mixture should form a ribbon when you lift the beaters out of the bowl. Add ¾ cups softened butter and 1 teaspoon vanilla and mix a couple more minutes. Stir in two cups of flour until just combined.

Just look at those bright, beautiful berries! Yum! We washed the cranberries with this equally bright red fruit colander.

Add the cranberries and stir to mix throughout. We used this cheerful spoon to stir and smooth the mixture in a buttered pan.

Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. Just look at those red festive berries!
