The kids loved the bright green color of the wrap! I love lunches like this because they take no time at all. Plus it’s totally customizable to what leftovers and veggies you have in the fridge. I used spinach in my wraps, but any leafy green will work. And after I made them, we all agreed that some tomato slices or carrot shreds would have been great too!

It’s really what takes this wrap to the next level. It’s a tasty mixture of mayo, salsa, and cumin. A little creamy, a little spicy, a little smokey, and it all just works perfectly together with the chicken and the spinach!I’ve never seen my family eat so much at lunch time before.

Ingredients
Cooking Directions
- 3 cups shredded, leftover rotisserie chicken
- 6 spinach wraps
- 2 cups baby spinach
- 1 cup Mayo
- ? cup Salsa
- ? tsp cumin powder
- Sliced tomatoes or shredded carrots (opt)
- Combine mayo, salsa, and cumin in a small bowl and set aside.
- Lay out one wrap and smear a line down the center of the wrap with a couple tablespoons of mayo. Add a handful of spinach on top of the mayo and top with other veggies and/or ? cup chicken. Tuck in the ends and tightly roll the wrap.
- Cut in half and enjoy!
