Lucky Leprechaun Pancakes Recipe

St. Patrick’s Day: A day of parades, green beer, and food that goes well with green beer. To be honest it’s one of my favorite holidays just because it’s so much fun!

Plus, green is probably my favorite color.

As you probably know, it’s good luck to be wearing green on St. Patrick’s Day so I imagine it’s also good luck to eat something green. So not only are these pancakes extremely lucky, but they also happen to be extremely delicious.

For the base of the pancakes I used my favorite buttermilk pancake recipe at the moment but reduced the sugar a bit because I topped the pancakes with a slightly sweet Irish whipped cream and green sugar sprinkles!

Start to finish these fun pancakes will only set you back about half an hour.

To start, mix together your dry and wet ingredients in two separate bowls.

Then stir the wet ingredients into the dry ingredients.? The batter should flow. If it’s very thick, feel free to add more milk. If it’s very thin (which is less likely in my experience), add a bit more flour.

When the batter is done, go ahead and add in as much green food coloring as you want! I use about 20 drops for mine.

I tried to pipe these pancakes into cute little shamrock shapes, but it didn’t really work. They just looked like I didn’t know how to make pancakes! So I went back to the traditional circle design.

It’s important to cook these pancakes over medium or even medium-low heat. If you cook them too hot, they will scorch and ruin the green color!

When the pancakes have small bubbles forming on top and are slightly firm around the edges, they are ready to flip! I snapped a photo of this one right before I flipped it.

As far as toppings, you don’t have to do anything fancy. Honestly, just maple syrup and the sprinkles is fun. If you are feeling ambitious though, the Irish whipped cream is my favorite part of this dish.

I beat mine by hand and it takes just a few minutes to pull it together!

Pile as much whipped cream as you want on a few pancakes and sprinkle with the green sprinkles.

It’s a really fun and delicious breakfast!

Ingredients
Directions

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoons salt
  • 1 cup buttermilk
  • 1/2 cup milk
  • 4 tablespoons unsalted butter, melted and cooled
  • Green food coloring
  • Maple Syrup
  • Green sprinkles

Irish Whipped Cream

  • 1 cup heavy whipping cream
  • 1 tablespoon sugar
  • 1 teaspoons vanilla extract
  1. For whipped cream, stir together ingredients in a large bowl. The colder the cream is the easier it will be to whip. Whisk cream or use a stand mixer with the whisk attachment until the cream holds firm peaks. Store in the fridge until needed.
  2. For pancakes, mix together dry ingredients in a medium bowl. In a smaller bowl, beat together the eggs, buttermilk, and milk. Melt butter and let it cool to room temperature.
  3. Add 20-25 drops green food coloring to the batter to make it bright green.
  4. In a large skillet or on a griddle, melt a small pad of butter or lightly oil the pan over medium heat. Once hot, pour in about 1/3 cup of the pancake batter.
  5. Let pancakes cook until small bubbles start to form on the surface and the edges firm up, about three minutes.
  6. Flip the pancake and let it cook for another 2 minutes on the second side.
  7. Serve finished pancakes immediately with whipped cream, sprinkles, and maple syrup.
