Lunchbox Sushi Recipe

It’s officially back to school time and while I don’t have kids, I used to be one so I figure that makes me an authority on kid lunches.

As a child, I never really was a picky eater, but I did like lunches that were easy to pick up and eat. Beyond that, a little variety also never hurt. A kid can only eat so many bologna sandwiches?

I can imagine the childhood me opening up my lunchbox and finding these little sushi roles and either A) eating them all immediately or B) trading them for baseball cards. Either way, it’s a win.

The cool part about these fun little rolls is that they take almost no time to make and you can put all kinds of fun fillings in them. For the versions in this post, I used some classic toppings: peanut butter, jelly, banana, cream cheese, and strawberries. It’s hard to go wrong with that stuff!

Making the sushi is pretty easy. Get some soft sandwich bread and, if you want, cut off the crusts which makes for a nicer presentation and makes them easier to roll.

Once you have your pieces of bread ready, grab a rolling pin and gently roll over each piece of bread. This will flatten it out nicely so you can roll it.

You can go crazy with toppings but the key thing to remember is to make really thin layers of whatever toppings you choose. Thick toppings just won’t roll. For peanut butter and jelly, for example, just do a really thin layer of each.

For bananas or strawberries, slice them as thin as you can and then kind of layer them in a single layer on the bread. I like to pair bananas with peanut butter and strawberries with cream cheese.

Once your bread is topped, just start rolling it tightly.

Once you have it in a nice tight roll, slice it into about four pieces and you are all set. I think three rolls (12 pieces) would make a great lunch for a kid with maybe a few veggies like carrots or something on the side.

It helps to keep these cool so I recommend packing them into a container with a chiller pack likeÿthis one! That will make sure that your sushi rolls stay nice and cool during the morning.

I imagine that coming up with fun lunches that kids actually want to eat can be really challenging so hopefully making some fun sushi out of toppings your kids like will make for a fun kid’s lunch!

  • Soft bread, optionally cut off crusts
  • Peanut Butter
  • Jelly
  • Bananas
  • Cream Cheese
  • Strawberries
  1. Get a soft sandwich bread and, if you want, cut off crusts to make it a bit easier to roll later.
  2. Use a rolling pin to roll bread until it’s pretty thin.
  3. Spread a thin layer of toppings on the bread. Some of my favorite combinations are: Peanut butter and jelly, peanut butter and banana, and cream cheese and strawberries. For the bananas and strawberries, make sure to slice them very thin.
  4. Tightly roll up the bread.
  5. Slice it into four pieces.
  6. rolls is a good lunch for a kid I imagine.
  7. Store in a cooled container or in the fridge.
