apple peanut butter muffin recipe instructions

What do you get when you put peanut butter, apples, and cinnamon together? This yummy recipe.

For the Cinnamon Crumb Topping:

  • 1/3 cup packed dark brown sugar
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter, melted
  • 2/3 cup flour
For the Muffins
  • 1/2 cup butter, softened
  • 1/2 cup packed dark brown sugar
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 cup yogurt
  • 2 teaspoons vanilla extract
  • 1 and 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1 and 1/2 cups peeled, chopped apple (about 2 small apples)
  • 1 jar peanut butter

For the Cinnamon Crumb Topping:

  1. Combine the brown sugar, sugar, cinnamon, and melted butter. Mix in the flour, until the mixture is thick and crumbly. Set aside.
  2. Preheat oven to 425 degrees. Prepare a muffin pan by greasing it.
For the Muffin Batter:
  1. In a medium bowl, whisk the butter with a fork until creamy. Add the brown sugar and granulated sugar and stir vigorously until creamed. Add the eggs, yogurt, and vanilla extract. Stir until the mixture is combined and uniform in texture.
  2. In a large bowl, combine together the flour, baking soda, baking powder, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and gently mix with a wooden spoon. Add the milk, gently mixing until fully combined. Finally, fold in the apples gently.
  3. Spoon the muffin batter evenly into the muffin pan. Sprinkle the crumb topping that you made on top of the batter.
  4. Bake for 5 minutes at 425 degrees F , then keeping the muffins in the oven, lower the oven temperature to 350 degrees F and bake for 15 more minutes or until a toothpick inserted in the center comes out clean.
  5. Drizzle the peanut butter over the muffins when they’re still hot. This will melt the peanut butter and create a nice drip effect on your muffins. Let cool completely before serving.
  6. Or stuff your face while still piping hot, we don’t mind.
