Chipotle Chocolate Chili Recipe
October 15, 2014
There’s a sort of secret ingredient that’s common in a lot of traditional Mexican cuisine that is frequently overlooked when people try to recreate dishes: chocolate. That’s right. If you’ve ever had a really rich Mexican sauce like mole, it almost certainly has a small amount of chocolate in it which gives the sauce some sweetness and counteracts the spicy elements in the dish.
Mexican Street Corn Recipe

One of my absolute favorite things to buy as a snack in the middle of a long day of site seeing is elote, or grilled corn. Well, it’s not always grilled, sometimes it is steamed, but I like to grill it! The corn always comes with lots of toppings and a rich sauce that has some spice and tang to it. It’s a wonderful snack and you shouldn’t have to travel to Mexico to have it!

Farmers Market Pasta Salad Recipe
July 9, 2014
You would be very remiss to not hunt out a farmer’s market in your area and explore this time of year. Sure, you may have to brave crowds and some of the produce might be a bit more expensive than you can find at the store, but it’s also the freshest and most amazing produce you’ll get.
Cheddar Cheese Corn Muffins Recipe
June 25, 2014
I have been trying to encourage my kids to take more responsibility for themselves and the household. We talked about how we are all members of our family and everyone has to help to take care of the house. A simple place to start to teach these lessons is in the kitchen. My kids have learned how to clear their spot after finishing a meal. They scrape their plate clean and place it in the sink. They are eager and willing to help, so I thought I would increase their responsibility by teaching them to help clean up after cooking. After baking cheddar corn muffins, we worked on some basic rinsing skills at the sink.

Every once in a blue moon, the kids are both away or they go to bed on time so Hubbyman and I get a quiet house to ourselves. I love being in the kitchen, but being able to whip something up really quick while we settle in for a movie night is high on my list.

April 2, 2014
From bland egg salad to goopy chicken salad, cold salads can get a bad rap at times. But this is an entirely different beast. Lightly poached shrimp mixed with lots of crunchy vegetables and spices and stirred with just enough mayonnaise to hold it together is a refreshing salad that can be served as a meal or an appetizer.
Fruit and Yogurt Cups Recipe
March 26, 2014
Fruit and yogurt sound like a perfectly healthy snack. But when you’re a kid, healthy is not exactly that enticing. My kids run from anything that looks remotely healthy. This time of year is filled with many food temptations and sweet treats, so getting kids to eat something that’s good for them is even trickier. So how can you get your child to eat something nutritious without a battle? I’ve found the answer is to make mealtime fun.
