One of my absolute favorite things to buy as a snack in the middle of a long day of site seeing is elote, or grilled corn. Well, it’s not always grilled, sometimes it is steamed, but I like to grill it! The corn always comes with lots of toppings and a rich sauce that has some spice and tang to it. It’s a wonderful snack and you shouldn’t have to travel to Mexico to have it!

I have been trying to encourage my kids to take more responsibility for themselves and the household. We talked about how we are all members of our family and everyone has to help to take care of the house. A simple place to start to teach these lessons is in the kitchen. My kids have learned how to clear their spot after finishing a meal. They scrape their plate clean and place it in the sink. They are eager and willing to help, so I thought I would increase their responsibility by teaching them to help clean up after cooking. After baking cheddar corn muffins, we worked on some basic rinsing skills at the sink.
