Parmesan Peppercorn Popcorn Recipe

parmpepperpopcorn_5030After the Oscars every year I always have a pretty good list of movies to watch. I try to always watch the best movie winner if I haven't seen it (and I haven't this year), but also I try to watch some of the smaller categories and focus on the award that that movie won. I've already seen "Gravity" which won in a number of the technical categories, but there are a few others that caught my eye that I missed. In any event, if you're like me, you might be watching some movies in the next few weeks and in my opinion no movie watching experience is complete without some good popcorn!

popcornoverhead_500 I made two popcorn varieties recently that were so amazing I thought I would share them. airpopper_500 You can make these variations with any popcorn you have: microwaved, stovetop, or air popper. Anything will do the trick! pepperparm_500 The first version is a savory mix of grated Parmesan cheese and freshly cracked peppercorns. I use a lot of pepper when I make it because most will fall through the popcorn so you need to over-season a bit. popcornupclose_500 The final popcorn is buttery, spicy, salty, and pretty much perfect. spicysyrup_500 The second variation is a completely different beast. To make the seasoning just stir together some real maple syrup with a tiny drizzle of sriracha hot sauce. Use the good stuff for the maple syrup. You don't need much and it makes a BIG difference. syrupdrizzle_500 Then just drizzle that mixture over your popcorn and season it with salt. This version is sweet, but has a tiny kick to it from the hot sauce. Just a warning for both of these versions: They are completely addictive. You will find yourself not wanting to share! I like to make a huge bowl of it and then let people scoop out their popcorn using small cups, like these plastic goblets, and then they can season the popcorn as they like! Parmesan Peppercorn Popcorn Recipe Instructions

Parmesan Peppercorn Popcorn Recipe

Prep Time: 5 minutes

Total Time: 10 minutes

Serving Size: 12 cups popcorn

Ingredients

  • 1/2 cup yellow popcorn kernels
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon coarse ground black peppercorns
  • 1 cup grated Parmesan Cheese
  • Pinch of kosher salt

Cooking Directions

  1. Cook popcorn however you prefer. These days I like to cook it in an air popper, but you can also cook the popcorn in a large pot with about 1/3 cup of vegetable oil. Cover the pot and place it over medium-high heat. Once the kernels start popping, vigorously shake the pot as the kernels pot. As soon as the popping slows to 2-3 seconds in between pops, pour popcorn into a large bowl.
  2. If you're making the Parmesan Peppercorn version, pour melted butter over the popcorn and sprinkle with pepper and grated parmesan cheese. Serve while warm!

Spicy Maple Syrup Recipe

Total Time: 10 minutes

Serving Size: 12 cups

  • 1/4 cup pure maple syrup
  • 1 teaspoon Sriracha hot sauce
  • Pinch of kosher salt
