Rolling out Mochi

If you like Mochi, you’ll love this dish. If you’ve never heard of Mochi, then this is a great way to introduce yourself to this Asian delicacy!

Mochi is a sweet, glutinous rice with high starch content used in Japanese cooking. It has a unique texture that reminds me of the “bubbles” in bubble tea.

To get started with this simple recipe, mix the mochiko and sugar in a bowl. Then add water and mix it thoroughly.

Colored Mochi

If you want to serve colored mochi, add food coloring to the water. We used red and blue. To cook the mixture, put in a covered microwavable dish and microwave for 4 minutes.

It will be very hot at this point, so before you try to roll it, let the mixture cool. (If you’re in a hurry, it’s okay to put the mixture in the freezer to help it cool faster.)

Rolling out Ice Cream Mochi

Now it’s time to get creative and get your origami on! Roll the mixture out flat, cut it into squares, then add ice cream (or chocolate) to the center of the small squares. Finally, pinch the mochi together around the edges and put it back in the freezer until you are ready to serve.

Yield: 10 servings

Ingredients

  • 1 cup mochiko sweet rice flour
  • 1 cup water
  • 1/4 cup sugar
  • 1 pint ice cream (or chocolate)

Cooking Directions

  1. Mix mochiko and sugar in a bowl.
  2. Add water and mix thoroughly.
  3. If you want colored mochi, add food coloring.
  4. Put in a covered microwavable dish and microwave for 4 minutes.
  5. Cool in the freezer or at room temperature.
  6. Roll it flat, cut the shapes and fold.
  7. Optional: add ice cream or chocolate and pinch the mocha together around the edges.
