I used a lot of spices in these bad boys but they all add something nice to the cookies so I wouldn't recommend leaving any out. I guess you could leave out the crystallized ginger since that's kind of an extra, but I like the little crunch they give the cookies.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 1 tablespoon ground ginger
  • 1 tablespoon crystallized ginger, chopped
  • 1 tablespoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 large egg
  • 1/3 cup dark molasses
  • 1/2 cup white sugar, for rolling

Cooking Directions

  1. Preheat oven to 350 degrees F. Whisk together flour, baking soda, salt, gingers, cinnamon, cloves, nutmeg, and allspice.
  2. In a large bowl, cream together butter and brown sugar until it's light and fluffy, about 4-5 minutes.
  3. Using a mixer, mix in egg and molasses and mix until smooth.
  4. Add the dry ingredients and mix until the flour isn't showing. Try not to over mix the dough.
